Yes, It's a good 'un isn't it Dolly? I like the prawn oven baked one done in lobster bisque too. I'm a great risotto fan too!!

I love the Tiger Prawn Risotto with Lobster sauce and often make this for me and OH.....

it does look really good dolly - did you use Pecorino cheese? I have no idea what it is!! never seen it in the shops i don't think?

I used Parma reggiano.....Pecorino is another hard italian cheese....think I have seen it in Tescos....

I adore risotto!!:)
Advice: if you make her Oven-baked Risotto Carbonara, you should put more stock into the risotto than the recipe mentions, because mine was a little bit dry (but delicious!).

I've taken a fancy for risotto lately. Did Delia's wild mushroom one last week and it was excellent was thinking of doing your baked spanish one tomorrow Dolly, sounds grand. There's also a few good ideas in this thread for others. Before last week hadn't made a risotto for ages - don't know why, I'd forgotten how good they are.
