Does anybody know a recipe for sponge cake to fit an 11'' round cake tin. Also any ideas to what i can use instead of marzipan. Thanks.
You can use an standard cake recipe, and scale up the ingredients to fit your tin. Scaling up is done by filling both tins with water, measuring the amounts and then working out how much to times the ingredients by for the larger tin. Or easier than that is to look at Rita's profile - she has a scaling up chart on there.
As for substituting marzipan, you can use buttercream - using half as much butter as icing sugar. Cover the cake and smooth it over, then leave about an hour to 'crust over' before putting the sugarpaste on.
