Hi there. Does anyone out there have a recipe for kiwi fruit jam? If I do 50/50 does it need pectin? Aparently it is a popular jam in France? Lainey x
Hi, I think 60%kiwi is better, you can add some lemon juice (a couple of tablespoons will be ok) and use 1/4 of an apple, like a granny smith, that contains natural pectine.

1 pound kiwi fruit pulp
1 tbsp water
1 pound sugar, see note.
Halve the kiwi fruits, then scoop out the pulp with a teaspoon and weigh it. Chop the pulp finely and tip into the preserving pan. Make certain you add any juice from the board on which it was chopped. Add the water and stir briskly to extract teh juice from the fruit. Simmer gently for about 5 mins only, then add the sugar. Stir over a low heat until the sugar has dissolved then boil briskly until the setting point is reached. Spoon into hot jars and seal down.
Note: kiwi fruit has a strongly sharp taste when just ripe and additional lemon juice might make the preserv too tart for some tastes. It is a good idea to use sugar that contains pectin for this recipe.If the fruit is rather ripe, add 1 tbsp lemon juice with the sugar.

Morning Biggs, I planted two kiwi plants this year (male and female) and after a slow start they have eventually started to grow. OH placed the chiminea too close to one and I think that severely stunted it's growth !!!! Not sure if they are in the right place, or if they will eventually have enough room but will wait and see. Have copied your recipe for future use..........like you say, it may be some time !!

Morning Yummy , We planted one kiwi, self fertilising, fingers crossed. It recovered well from the hard frost but then hasn't really done very much. Perhaps it's still a bit shell shocked :0)
My blueberry came to nothing (self fertilising) so we went and bought another as they do seem to like some company.
Oops, sorry for hijacking your thread Lainey, just a small part of the French contingent catching up on garden stuff:0)
As an aside, the French are amazed at us making elderberry wine, they make jam from the berries.
