Yesterday we had lamb shanks, slow simmered in red wine and red onions, along with colcannon and veg. The lamb shanks were lovely but I hadn't realised how large they were and neither of us could finish our shanks. Today, I've stripped the meat from the remains and added par boiled diced potatoes, carrots and leeks, added the red wine gravy and the onions put it all in a pie dish and popped a pastry topping on. Hopefully it will be good, it certainly smells good.

Agree with you Liz lamb shanks are lovely (especially Welsh ones LOL!) one is emough between 2 if they are a good size & very good value IMHO - we pay £2.50 each here- I also do 2 in the slow cooker with lots of red wine.

Liz, lamb is my favourite meat and shanks are my favourite bit.

That idea of yours for tea sounds like absolute perfection. Hope you enjoyed your tea.

It was delicious - just as good as the first time around, maybe even better.

My god i wish i could get lamb that cheap in London - if it is ever on special is from New Zealand and looks awful!

I love lamb.....haven't had shanks for a while...might do them one night this week...

Oh Liz, you are such a temptress, I know lamb shanks benefit from a second cooking, you have me salivating and wishing it was lamb shank in the mouth and not a bulls eye (not the animals visual aids - the old fashioned sweet.).
