Salads and vegetables

You'll obviously need only one potato dish, and if it's warm out we don't suggest doing the hollandaise one. As for salads, either do a plain green salad with the nicest leaves you can get, or choose a salad recipe from the site – they scale-up well.

Curried Chicken Salad

Curried Chicken Salad

This is unbelievably easy if you buy ready-cooked chicken. It's also a great recipe for leftover turkey on Boxing Day.

Four Star Slaw

Four Star Slaw

The four 'stars' in this case are celeriac, carrot, cabbage and spring onion. The result is a very crunchy fresh-tasting salad that can be made the day before, if you cover it with clingfilm and keep it in the refrigerator until needed.

Roasted Red Onion, Rocket and Parmesan Salad

Roasted Red Onion, Rocket and Parmesan Salad

This salad is made with slightly charred oven-roasted red onions, which are then marinated in olive oil and lime juice and layered with rocket leaves and flakes of Parmesan. A truly wonderful combination.

Apple, Cider Salad with Melted Camembert Dressing

Apple, Cider Salad with Melted Camembert Dressing

When I wrote my Summer Collection book I felt I'd got Caesar Salad as perfect as it could be, but then I ate so many Caesar Salads that I began to get bored. If this has happened to you, too, then let me tell you that this makes an absolutely brilliant alternative, especially in the winter months.

Potato Salad with Roquefort

Potato Salad with Roquefort

This potato salad, with creamy, piquant Roquefort and the added crunch of celery and shallots, is good to eat all by itself, but I also like to serve it with cold cuts at a buffet lunch. It's therefore a very good recipe to have around at Christmas.

Thai Grilled-beef Salad with Grapes

Thai Grilled-beef Salad with Grapes

This recipe was given to me by chef Norbert Kostner at the Mandarin Oriental Hotel in Bangkok when I visited the cookery school there. It's lovely served as a first course or included in a cold-buffet menu.

Jacket Potato Halves stuffed with Melted Gruyere and Chives

Jacket Potato Halves stuffed with Melted Gruyère and Chives

Desirée is my all-round reliable favourite potato – it's full-flavoured, firm and waxy. You need to top these potato halves while they are still hot so that the Gruyère melts well – on a cold potato, it has a tendency to go hard and crispy.

Camargue Red Rice Salad with Feta Cheese

Camargue Red Rice Salad with Feta Cheese

This is a lovely salad for outdoor eating on a warm, sunny summer's day.
