I had this most gorgeous pasta sauce when on mi hols....it was called Parme...was served with a couple of slices of parma ham...over pasta...was pinky/orangey in colour...I think it had gorgonzola in it...all a little vague Im afraid...but does anyone know what I am talking about, or even better...how to make it??
is parme just the foreign way of spelling parma ham? or a shortened version of the word parmesan???

and I heard something interesting on the radio today...you probably all knew this anyway...that the pigs they get the parma ham from are fed on the waste products produced from making parmesan cheese...very interesting i thought!

Sam, a little like carbonara...but not as creamy...more tangy, cheesy, meaty, a slightly thinner sauce...im sure it had sundried toms in it too, which gave it its flavour....

Could it have been the Cinque P (Five P's) sauce?
It consists of Panna, Prezzemolo, Parmiggiano, Pomodoro und Pepe, which is cream, parsley, parmesan, tomato and pepper. That turns out quite orangey pink.
