I quite often take egg mayo sandwiches to work for lunch and cook the eggs the night before ready for the next morning. How long will the cooked eggs be ok for if they are kept in the fridge? I was wondering if i could maybe cook 3 or 4 and use them for the week ( i use 1 a day in sandwiches) Any ideas?
BB, if it were me, I wouldn't like to keep the hardboiled eggs more than a couple of days in the fridge. I don't think I'd like to keep them for a week, even in the fridge. I'm a bit funny about eggs - I won't use them even if they are only a day past their use-by date. When you make your sarnies though, can you make a few for me, please. I lurrrve egg mayo & cucumber or cress sarnies.
I actually think that hard boiled ones will be fine for a week. if you think about it, you can buy a scotch egg from a shop and it will have over a week on it......
I would only do this with hard boiled ones though.

I suspect you're right, something I think there might be a bit of a smell emanating from the packet! Cooking the eggs for a week is worth trying, though - but I might be inclined to check the eggs are well in date before you cook them. Enjoy your sarnies! m
I think as long as you coole your eggs in icy water after the boil..not only does that stop the "black ring" around your yolk....it helps preserve your egg.
I would go for James' suggestion...but maybe only last them for 4 days.......
I love egg and cress or similar sarnies, or on top of jacket spud with lashings f mayo!!! and balck pepper.
