I have a similar query to one already posted about making a madeira wedding cake in advance. How far in advance can it be made if it is going to have a filling, such as buttercream as well as being marzipanned and iced. Does the marzipan need a week to dry out? I have no experience of making wedding cakes - don't know if fillings are inappropriate! And does it have to be sugarpaste icing and not royal icing. Thanks!
I do not like to make madeira/sponge in advance as I think it does start to dry out. But in theory apparently a couple of days is fine. The marzipan only needs to be left overnight to dry and you can cover it with either sugarpaste or royal icing. Fillings ARE appropriate for wedding cakes -no problem (otherwise I think they really can be a bit dull and dry!) If you are short of time, you can make and fill the cake when you have time, then freeze it, bringing it out the night before you plan to marzipan it. Hope this helps!
